Chocolate Pudding/Birthday Cake

Serves a bunch of children or adults!
Ingredients
1 cup caster sugar*
115g Nuttelex margarine
2 cups Orgran wheat free/gluten free self-raising flour
½ cup freshly stewed apple
up to 4 drops vanilla essence*
½-1 cup (125-250mL) rice milk*
2 teaspoons cocoa powder*
Method
Pre-heat oven to 170°C.
Mix together margarine and sugar until well creamed in a
mixing bowl.
Sift self-raising flour and cocoa powder into bowl and stir to
combine.
Add the stewed apple, vanilla essence and rice milk and blend well.
Place in round non-stick cake tin and bake for approximately 40
minutes. Cooking time may vary between ovens.
Once baked, carefully turn upside down on a cake board smooth surface or plate
and set aside to cool.
Notes
You will find that the mixture is quite moist and I tend to be a
little “heavy handed” with the rice milk, so be cautious. It is
more like a pudding but does sit and cut like a cake. I usually
bake for approx. 40 minutes at 170°C but the cooking time may differ
for your oven. Use a skewer to test if the cake is cooked by
checking that there is not liquid on the skewer after removing.
This cake is moist and a 'pudding' so anticipate it to be quite
moist.
I make this this cake for Matthew’s
Birthday and purchase a suitable 'cake picture template' to place on top. I
find the kids want the 'allergy' cake rather than the
regular one!
