Plain Vanilla Biscuits

Makes about 15 biscuits
Ingredients
1 cup Nuttelex margarine
1½ cups of caster sugar
2 tablespoons golden syrup*
3 cups Orgran Multi-Purpose Self-Raising flour (wheat free/gluten
free)
3 teaspoons gluten free/wheat-free baking powder (Ward's Brand)
1 tablespoon rice milk*
2 teaspoons vanilla essence extract* (optional)
Method
Preheat oven to 200°C.
Cream together margarine and sugar.
Add golden syrup and sift in the dry ingredients.
Add the rice milk and vanilla and mix until ingredients just
combined.
Place mixture onto a floured board and roll until 1cm thick.
Cut into shapes with biscuit or pastry cutter.
Place on a greased baking tray and bake for 7-10 minutes or
until golden brown.
Remove from oven and place on cooling rack.
Hints
Sometimes when I have not got the time to roll out the mixture I
just make little balls by hand, place them on the tray and then make
a pattern with a fork, they still taste nice! I also get my son
involved in helping to cook this recipe and we use animal-shaped
cookie cutters. Kids love to see the end result and
usually eat heaps of the biscuits to boot!
