Peppermint Slice

Ingredients
1¼ cups plain gluten-free/wheat-free flour
½ teaspoon gluten free/wheat free baking powder
(Ward's brand)
¼ cup pure cocoa powder
½ cup caster sugar
1 egg, lightly beaten
140g Nuttelex margarine, melted
2 teaspoons vegetable oil*
2 cups pure icing sugar*
peppermint essence to taste*
200g Sweet William Original Chocolate
40g Nuttelex margarine
Method
Pre-heat oven to 180°C
To make the base sift flour, baking powder and cocoa into a
bowl.
Add sugar and egg to dry mixture.
Then add melted margarine into mixture and mix well.
Using a slice tin sprayed or lined, spread base mixture evenly in
the tin and cook until firm at 180°C.
Meanwhile, in a saucepan combine oil and sugar and
gently heat until mixture runny.
Add a few drops of peppermint essence to taste.
Once base mixture in oven has firmed, remove and pour in the
peppermint mixture and chill in fridge to set (approx. 1 hour).
Once mixture has set, remove from fridge ready to prepare chocolate
coating.
Place chocolate into a microwave proof dish or jug and heat about
approximately 1 minute or until chocolate is runny.
Remove from microwave and stir in remaining margarine, constantly
mixing to avoid chocolate hardening.
Spread the hot chocolate mix immediately over the peppermint topping
in order for it to set.
Put into fridge to set completely.
Once set, remove from fridge and slice into desired pieces.
Handy hint:
If chocolate starts to harden prior to adding in the margarine,
put back into microwave dish and return to microwave for
approximately 30 seconds.
