Lentil Patties

WF = wheat free
GF = gluten free

Serves 4.
Ingredients
1 cup red lentils (soaked overnight)
2 cups mashed potatoes (or mixed vegetables)
1 brown onion, peeled and finely chopped
rice milk* (enough to moisten mixture)
1½ cups white rice flour
canola spray
sunflower or safflower oil for shallow frying (optional)
Method
Mix all ingredients and roll into medium sized-balls and flatten to form patties.
Heat oil (in accordance with size of pan) in non-stick frying pan,
add patties and slowly fry on each side.
Alternative
Gluten free/wheat free rice crumbs can be used in place of the rice
flour.
Hints
You can fry the patties in a small amount of sunflower or safflower
oil for a more 'crunchy' effect. This recipe can also be used to make small balls for bite-sized
snacks which can be stored in the refrigerator for later use.
