The book incudes both fish (F) and shellfish (S)
(crustaceans) in the classification 'fish-free'; if you are able to
eat fish but not shellfish or vice versa, modify your food avoidance
list accordingly, annotating which fish-or-shellfish-based recipes
suit you.
Whether you have to avoid all fish or shellfish, or particular
types of either, will depend on your individual sensitivity.
While, in many cases, the inclusion of fish in a food may be
obvious, highly processed foods may contain hidden fish or shellfish
- for example, fish is often used as the basis if imitation
shellfish such as crab. As with other foods sensitivities, the
risk of
cross-contamination with fish or shellfish proteins may
warrant avoiding restaurants and food outlets that serve these.
Avoid
Fish
All fish and any fish-derived foods products labelled with any
of the following ingredients (*if fish derived, the Food Standards
Code requires declaration of the fish-based origin):
- anchovies, anchovy sauce or extract;
- disodium inosinate (fish- or meat-derived flavour enhancer,
food additive 631)*
- fish - all or specified types according to individual
sensitivity;
- fish oil, sauce and stock;
- fish collagen;
- fish roe, caviar or tarama;
- imitation crab, lobster, shrimp (see 'surimi' below);
- omega-3 fortified foods*;
- roe (fish eggs);
- seelachs;
- surimi (fish muscle reshaped to make imitation seafood -
almost any species can be used. It is commonly found in
imitation crab legs, lump crabmeat, crab cakes, imitation
lobster products and imitation scallops).
Avoid
Shellfish
All shellfish and any shellfish-derived product labelled with
any of the following ingredients:
- abalone, clam, cockle, crab, crayfish, crevette,
langoustine, lobster, molluscs, mussels, oyster, periwinkle,
prawns, scallops, sea urchin, shrimp;
- imitation seafood;
- oyster sauce;
- shrimp paste.
